What are your two go-to meals? What do you cook most often in your household?
Sarah shared a great crock pot pork chop recipe with me earlier this month, and I made it for the first time on January 1st. It is so good - I've made it three times since then!
Crock Pot Pork Chops
- One packet dry ranch dressing mix
- One can cream of whatever soup
- 1/2 cup of chicken stock
- 1 teaspoon(ish) of chopped garlic
- 4 boneless pork chops
- Combine the first four ingredients in your crock pot; mix well.
- Place your pork chops in your crock pot.
- Cook 4-6 hours on low.
My go-to meal when I'm rushed or haven't been to the grocery store is baked salmon (or halibut, or tilapia). I buy frozen salmon fillets from Sam's and drizzle them with olive oil. I coat them with lemon pepper seasoning, and place in a foil packet with sliced lemons on top. Bake 25ish minutes at 350 degrees - so good, fresh, and healthy!
My favorite not-so-good for you easy meals are Suddenly Salad Ranch & Bacon Pasta (add tuna and it is a meal!) and chili made from this kit. Seriously, it makes the best chili I've ever had in my life.

One of my favorite "no cook" meals is a rotisserie chicken (deboned) mixed with bbq sauce on a bun with pickles. Volia bbq chicken sandwiches. Also frozen meatballs with a jar of ragu served on hotdog buns with mozzerella cheese. Meatball subs. Easy and delicious. For my youngest i just give him the meatballs and sauce he loves them.
I am for sure going to try that pork chop recipe. I just started using my crock-pot and I love it!
