Tuesdays at the Table

Breakfast is a meal that is seldom eaten at my house. I'm not sure why. I never really ate breakfast growing up, and now that I'm "grown" I haven't been able to get rid of that bad habit. Even though I know the benefits, I just can't get myself together enough in the morning to prepare a meal. I usually just grab a piece of fruit, eat a protein bar, or make a protein shake. If I do eat breakfast, it is usually prepared for dinner.

My friend Sam at Boat Drinks and Dreams shared a recipe for baked oatmeal that I bookmarked many moons ago and only recently got around to making. It is delicious, and you probably have most of the ingredients you need on hand. This would be wonderful to make on a Sunday and eat throughout the week for breakfast.

Baked Oatmeal
1/2 cup vegetable oil
2 eggs, beaten
1 cup sugar
3.5 cups oats (quick cooking or old fashioned)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk

Mix together the ingredients above and bake at 350 degrees for 35-40 minutes. I added peaches and topped with a little brown sugar. Be creative - you could use vanilla soy milk, add in cranberries or other dried fruits, raisins, bananas, pumpkin... the possibilities are endless.

Quiche is another staple around our house. It's great for nights when you need something quick and easy, or nights when you are running low on groceries. All you need is a pie crust (I buy multiple of these and always have one on hand in my freezer), eggs, milk, cheese, and any other meat or vegetable of your choice. You can also skip the pie crust - I did in the picture you see below.

Quiche
4 eggs
1 cup milk
Cheese
Meat or vegetable

Beat the eggs and milk until frothy. Add cheese (I use a large handful, but this is to your personal taste) and meat or vegetable. Bake at 350 degrees for 35 minutes.

Again, the possibilities are endless with quiche. Broccoli and cheese is a big hit around here, as is bacon and cheddar and ham and cheese quiche.
